SUSTAINABLE AQUACULTURE ON THE MENU IN SKÖVDE

WIN WIN Award teamed up with Skövde municipality's meal department and Coop Väst for the project “Under ytan till Grytan” / “Under the surface to the pot” to engage the citizen’s in sustainable aquaculture.

WIN WIN Award teamed up with Skövde municipality's meal department and Coop Väst for the project “Under ytan till Grytan” / “Under the surface to the pot” to engage the citizens in sustainable aquaculture.


On September 1st, local chefs presented aquaculture-based menus at five local preschools, schools and senior residences in Skövde and in Coop Väst’s store.


Chef Gustav Ranstrand, also known from the campaign Catch of the week, served Wallenbergare made by minced Clarias from Gårdsfisk with mashed potatoes, "thai" fish cakes with cilantro and ginger sauce and Mussel Lasagna for the pupils at Helenaskolan. It was a huge hit!


Musselbaren from Ljungskile was eager to spark the youth's interest in sea food and placed a muurikka in the courtyard where they grilled blue mussels and served mussel meatballs with mashed potatoes and lingonberries. Truly delicious!


At the end of the day we went to Stora Coop in Skövde and met Annica, and she was quite the Clarias ambassador! On the menu we found the classic Pasta Bolognese, but this time with a twist – it was made out of Clarias. Yet another creative display of what is possible to do with this sustainable fish.
